Turkey Tetrazzini is a delicious, creamy pasta dish that’s perfect for using up leftover turkey. Here’s a recipe for a classic Turkey Tetrazzini that serves 4-6 people:

Ingredients:

  • 8  (225g) pasta (spaghetti or linguine works well)
  • 2 cups cooked turkey, shredded or cubed
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or turkey broth
  • 1 cup heavy cream or milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup dry white wine (optional)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional for topping)
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions:

Cook the Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  1. Sauté the Vegetables:
    • In a large skillet, melt the butter over medium heat. Add the chopped onions and sliced mushrooms. Cook until the onions are translucent and the mushrooms are softened, about 5-7 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Make the Sauce:
    • Sprinkle the flour over the sautéed vegetables and stir to coat evenly. Cook for about 1-2 minutes to eliminate the raw flour taste.
    • Gradually whisk in the chicken or turkey broth and the white wine (if using), ensuring there are no lumps. Continue whisking until the sauce begins to thicken.
    • Reduce the heat to low and stir in the heavy cream, thyme, nutmeg, salt, and pepper. Simmer the sauce for a few minutes until it thickens slightly.
  3. Combine the Ingredients:
    • Stir in the cooked turkey and let it warm through in the sauce for 2-3 minutes.
    • Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the sauce.
    • Stir in 1/4 cup of the grated Parmesan cheese and the shredded mozzarella or cheddar cheese.
  4. Bake the Casserole:
    • Preheat your oven to 350°F (175°C).
    • Transfer the pasta mixture to a greased baking dish.
    • If desired, sprinkle the top with breadcrumbs and the remaining Parmesan cheese for a crispy topping.
    • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the casserole is bubbling.
  5. Serve:
    • Remove from the oven and let it rest for a few minutes before serving.
    • Garnish with chopped fresh parsley if desired.
